Keto & Low Carb Irish Cream


8-10 servings

1 cup of Erythritol

1/2 tsp cocoa powder (unsweetened)

1 tsp instant coffee

2 egg yolks

500 ml of heavy cream

1 tsp vanilla extract

1 cup of Irish Whiskey (for example Jameson)

Do you miss Irish Cream (Baileys) during the holidays? No more! Here’s a GREAT substitute for a healthy and low carb version of the traditional (not so healthy) recipes:

Whisk together the erythritol with cocoa powder until there are no lumps in a sauce pan. Add coffee and egg yolks. Whisk until you have a paste. Then add HALF of the cream, little bit at a time.

Heat up the sauce pan on medium/low. Do not boil! The temperature should get to around 198F. Remove from heat and let it cool down.

Add remaining cream, vanilla and whiskey. Strain and store in the fridge. Serve on ice or in coffee.
